You can user filter action method for tracking the user and add your custom code for method for the filter method and use the filter attribute for the controller

1)OnActionExecuting.
2) OnActionExecuted.

It all depends on the level of details required. Depending on that you can either have trigger approach where you can log actions in a table by way of writing triggers on desired number of tables.

Or another option is to have ActionFilters written. They intercept each and every request making it super easy to track every action of every user.
