Do you have a choice? Post what kind of options you have? You should pick projects that can help you get a job. HTML, JavaScript, Angular is one of the tracks of web development. Xamarin is also getting popular for cross-platform development. Microsoft has no choice but to have Xamarin as a part of their .NET Core to give MS developers options to build mobile apps.

You have to choose your project with following things to be consider. To be only specific to software development,
Software development for hardware base products. e.g. bio metrics, barcode etc
Embed software development.
Only software development.
I prefer first or second because that will give you more knowledge.
So develop project as per above things to be keep in mind.
Talking about technologies,
In today's world mobile technologies are in super demand.
You can develop software using JAVA which will be great.
or you can use C# to develop programs.
These two languages are core of everything..

Use SQL Server to create your database.
Try to use crystal report to view reports.

All above things not only enhance your project but also enhance your carrier since they will add an advantage in your resume.
