You know IBOutlet etc. you could define a property for the View and map the UIView inside the UIScrollView to that property.
I think you should start from the basics, rather than try to learn the bits and pieces. Please go through ITunes-U - Standford University -> "IPhone and iPad Development" training videos will be really interesting.
