I think what you need is live video screen capture of the employee's desktop, and stream the video through the LAN to another computer. One way to do that is to use Leadtools multimedia toolkit, which has a screen capture video source (acts like camera for all or part of screen) and it also has video streaming functions and playback or recording at the other computer.

If you want to record employee's PC activities in any organization then you have to use any PC monitoring software. I would recommend Kernel Computer Activity Monitor software. It is easy to use and able to trace all the ongoing LIVE desktop activities. This software records online and offline employee activities.
