SharePoint 2010 templates

Template selection totally  depends on what are you going to develop. If there could be multiple type of components in your solution/project (web part, list definition, workflow etc.) then best approach is to go with 'Empty SharePoint Project' and then use 'Add Item' from project later to add various SharePoint component.

 

Only difference between specific template (Visual web part, list definition, workflow etc.) and empty template is that specific template comes with 1 already added instance for that particular component. But you can still use these template and remove items later if you don't want.
