First we need to define what you mean by traditional data science. Probably you mean traditional development, since data science implies an emphasis on data, statistics, and analysis, which naturally excludes core software engineering.
For me, traditional development would be non-interactive (batch) programming, such as what .Net programmers would call console programming. Initially programming was nearly entirely non-interactive; what you might call back-end but exclusively back-end.
Originally interactive applications used terminals that had extremely limited processing capabilities. They were called dumb terminals. IBM's Customer Information Control System was a big one of the mainframe systems that supported interactive applications using dumb terminals. Programs in the Mainframe computer did everything except show the data for the person.
Let us say that the beginning of the internet was the first browser. People might argue with me but HTML originally was more of a word processing application. Originally there were no scripts. Then scripts were added and HTML became a GUI. Due to that design path, web apps are more complicated than most other GUI apps.
As you can see, the term traditional is blurred for me. It might refer to batch processing or it can refer to various stages of interactive technology but it can go sideways and refer to GUI apps in other systems. In Linux systems there are a variety of GUI systems integrated into what are called desktop environments. Some say that Android is an operating system but it is more of an environment designed for small devices, much like desktop environments for desktop computers.
The terms full-stack, front-end and back-end are typically used for web apps only. Typically full-stack is just a combination of front-end and back-end and front-end is what executes in the browser and and back-end is what executes in the server. The back-end programming would be generally the same as for many other types of programming except the processing of state (managing data across interactions) are generally unique to back-end web apps.

Full-stack data science covers the entire process, from collecting and cleaning data to building models and deploying them into production. Traditional data science usually focuses more on analysis, modeling, and extracting insights from data. In simple terms, full-stack data scientists handle both the data science work and the engineering needed to put those solutions into real-world use.
