in my grid I'm using a DatePicker (for show and edit):
- How can I show only date and hide time?
- When I edit the cells with Datepicker the format of date is "MM/dd/yyyy", how can I convert it in "dd/MM/yyyy"?

Your xaml is correct. Just add this property :
you need to change your system time setting as below steps.
1) Go to Change Date and time setting from calender.
2) Change Date and Time
3) Change calender setting
4) Short Date
