I'm not sure if I understood the original question correctly, but there are basically 2 ways to "extract" text from an image: 1) Have a user read it and type it (human recognition or transcript operators). 2) Perform automated optical character recognition (OCR). I don't think you mean the first, and I'm not sure why you don't want the second. But if you want to automate the process, you must use an OCR engine such as modi, leadtools or tesseract.
