Passing and capturing paypal custom variables

I am newbie to paypal, can anybody help me that how to pass custom variables and also capturing that variables via IPN handler.

I have a form to pay donations, so i want to send contact no, address, donationID, etc. And after successfull payment of donation, i want to capture the given fields back to my application via IPN
