hello, i see tutorial how to track email if open or not i found this course but email-status not changed when i open email must be email_status='yes' and his default value is ='no'

You simply can't (at least as of today).
Github pages serves only static content (html, CSS and JavaScript) .
Your php codes will have to be hosted somewhere else on a real server
