remove some characters from a string

Hello;

 

    I have a gridview , in which a data "Large Scale Public & Private Sector"  is stored. But when I am selecting it and save in a string, It converts in "Large Scale Public & Private Sector". How can I remove "amp;" from string. And what is reason behind it?
